High-Protein Orange Cheesecake

Ingredients
- 1 cup cottage cheese
- 2 eggs
- 2 tbsp honey
- 1 tbsp cornstarch
- 1 tsp vanilla extract
- 1 orange zest (Zest of 1 large orange.)

Preheat the oven to 170°C (340°F). Line a 6-inch round cake pan with parchment paper.

Add the cottage cheese to a blender.

Add the eggs, honey, cornstarch, vanilla extract, and zest of the large orange to the blender.

Blend until the mixture is silky smooth and creamy, with no noticeable lumps of cottage cheese remaining.

Pour the blended mixture into the parchment-lined cake pan and smooth the surface if needed.

Bake for 35–40 minutes, or until the cheesecake is set. The center should no longer look liquid, though it may retain a slight wobble.

Remove the cheesecake from the oven and let it cool completely in the pan.

Refrigerate for at least 4 hours so the cheesecake can fully firm up.

Slice the chilled cheesecake and serve.
