Ingredients
- 2 chicken breast (sliced into cutlets or thin strips)
- salt (to taste)
- black pepper (to taste)
- garlic powder (for seasoning chicken)
- 1 tbsp olive oil (for searing chicken)
- 1 tbsp butter (unsalted)
- 8 oz mushrooms (sliced (cremini or button))
- 3 clove garlic (minced)
- 1 cup heavy cream
- 0.25 cup parmesan cheese (grated)
- 1 tbsp fresh parsley (chopped, for garnish)
Steps
- 1
Season the chicken breasts on both sides with salt, black pepper, and garlic powder.
- 2
Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear for 5-7 minutes per side until golden brown and cooked through. Remove chicken from the pan and set aside.
- 3
In the same skillet, melt the butter. Add the sliced mushrooms and sauté for 5 minutes until they release their moisture and turn golden brown.
- 4
Add the minced garlic to the mushrooms and cook for 1 minute until fragrant.
- 5
Pour in the heavy cream and bring to a gentle simmer. Let it cook for 2-3 minutes to slightly thicken.
- 6
Stir in the grated parmesan cheese until melted and the sauce is smooth. Season the sauce with additional salt and pepper if needed.
- 7
Return the cooked chicken to the skillet, spooning the sauce over the top. Let it simmer for 1-2 minutes to heat through.
- 8
Garnish with fresh chopped parsley before serving.
Notes
Serve over pasta, mashed potatoes, or with a side of steamed vegetables. If the sauce becomes too thick, add a splash of chicken broth or water to reach desired consistency.
