Ingredients

  • 300 g Shrimp (cleaned and deveined)
  • Salt (for shrimp seasoning)
  • 1 tsp Turmeric powder (turmeric)
  • 0.5 tsp Curry powder (curry powder)
  • 0.5 tsp Chili powder (chili powder)
  • 1 tbsp Cooking oil (a little oil, divided for shrimp and tempeh)
  • 1 tbsp Cornstarch (cornstarch)
  • 200 g Tempeh (sliced)
  • Salt (for tempeh seasoning)
  • Black pepper (black pepper)
  • 0.5 tsp Garlic powder (garlic powder)
  • 0.5 tsp Chili powder (for tempeh)
  • 4 Shallots (shallots)
  • 2 cloves Garlic (garlic)
  • 1 Tomato (tomato)
  • 2 Large red chili (large red chili)
  • 5 Bird's eye chili (red bird's eye chili)
  • 1 tsp Shrimp paste (belacan)
  • 1 tsp Cooking oil (for sambal roasting)
  • Salt (salt to taste, for sambal)

Steps

    Prepare the Turmeric Fried Shrimp (Udang Goreng Kunyit): In a bowl, season the shrimp with salt, turmeric powder, curry powder, and chili powder.

    Add a little oil and cornstarch to the shrimp and toss until evenly coated.

    Place the shrimp in the air fryer and cook at 180°C (350°F) for 10 minutes.

    Prepare the Fried Tempeh (Tempeh Goreng): Season the sliced tempeh with salt, black pepper, garlic powder, and chili powder.

    Add a little oil to the tempeh and toss to coat.

    Air fry the tempeh at 160°C (320°F) for approximately 15 minutes, or until crispy, depending on the thickness of the slices.

    Prepare the Air Fryer Sambal: Place the shallots, garlic, tomato, large red chili, and bird's eye chili in the air fryer basket.

    Drizzle with a little oil and air fry at 180°C (350°F) for 15 minutes.

    Add the shrimp paste (belacan) to the air fryer basket with the vegetables and continue cooking for another 3 to 5 minutes.

    Remove the roasted sambal ingredients from the air fryer, add salt to taste, and mash or blend them into a paste.

Notes

The cooking time for tempeh may vary based on how thick you slice it. For the sambal, the author suggests roasting the aromatics first before adding the shrimp paste (belacan) to prevent it from burning.
