Ingredients

  • 3 Tomatoes (Wash and dice)
  • 2 King oyster mushrooms (Tear into strips by hand)
  • 2 小把 Cilantro (Cut into short sections)
  • 1 Lemon (Juice the lemon)
  • 2 Chili peppers (Cut into short sections; adjust to taste)
  • 1 Cucumber (Julienne)
  • 2 人份 Angel hair pasta
  • Salt (Use as needed for cooking the king oyster mushrooms and noodles)
  • Cooking oil (Use for pan-frying the king oyster mushrooms and sautéing the tomatoes, adding in batches)
  • 1 大匙 Ketchup (If you do not eat ketchup, substitute tomato paste)
  • 2 大匙 Kombu soy sauce
  • 1 大匙 Mirin
  • 2 大匙 Vegan fish sauce
  • 1 大匙 Sesame oil
  • Ice water (For chilling the cooked noodles and keeping them cold and springy)

Steps

  1. 1

Wash and dice the tomatoes; julienne the cucumber; and cut the cilantro and chili peppers into short sections. Tear the king oyster mushrooms into strips by hand and set aside.

  2. 2

Heat a small amount of cooking oil in a pan and add the torn king oyster mushrooms. Season with salt as needed and pan-fry until golden brown on the surface, then remove from the pan.

  3. 3

Add a small amount of cooking oil to the same pan, then add the diced tomatoes and sauté until softened.

  4. 4

Once the tomatoes are soft, add the ketchup and stir-fry until the flavors meld and the ketchup is evenly combined with the tomatoes. If you do not eat ketchup, substitute tomato paste.

  5. 5

Transfer the sautéed tomatoes to a bowl and set aside.

  6. 6

Bring a separate pot of water to a boil, add a small amount of salt, and cook the angel hair pasta. Following the video instructions, cook for about 2 to 3 minutes; do not overcook.

  7. 7

Once the noodles are cooked, drain them and immediately place them in the ice water to chill, keeping them cold and springy.

  8. 8

Place the chilled noodles in a large bowl and add the sautéed tomatoes and king oyster mushrooms, cilantro, julienned cucumber, and chili pepper sections.

  9. 9

Add the kombu soy sauce, mirin, vegan fish sauce, sesame oil, and lemon juice.

  10. 10

Toss all the ingredients and seasonings thoroughly until evenly combined, then serve.

Notes

The video does not provide exact amounts of cooking oil or salt; use as needed for sautéing and cooking the noodles. Chilling the noodles before tossing them with the other ingredients helps keep them cold and springy. Adjust the amount of chili according to your spice tolerance.
