Weights are estimates. Together, the ingredients weigh about 2.47 kg before cooking, which is about 410 g per serving.
Steps
In a medium saucepan, combine 1 1/4 cup sugar, 1 1/4 cup water, and the lemon peels.
Stir until the sugar dissolves.
Turn on low heat and simmer for 5 minutes.
Remove from heat and let the syrup steep for 15 minutes to infuse the lemon flavor.
In a blender, combine the diced pineapple, frozen dragonfruit cubes, and 1/4 cup of the cold water.
Blend until smooth.
Strain the fruit mixture 1-2 times through a fine-mesh sieve, depending on how thick you want the final drink to be.
In a large pitcher, combine the pineapple-dragonfruit puree, 1 cup of fresh lemon juice, and the prepared simple syrup.
Stir well to combine.
Stir in the remaining 2 cups of cold water to dilute to your desired strength and sweetness.
Taste the lemonade and adjust if necessary, adding more lemon juice for tartness or more syrup for sweetness.
Serve over ice.
Notes
You can adjust the tartness and sweetness at the end to suit your preference. Straining the fruit puree is optional but recommended for a smoother texture.
