Ingredients

  • 0.5 lb shrimp (finely minced and patted dry)
  • 2 tsp cornstarch
  • 1 tsp sesame oil
  • 1 tsp soy sauce
  • 2 garlic cloves (grated (or 1/2 tsp garlic powder))
  • 2 tbsp green onions (chopped)
  • salt (to taste)
  • black pepper (to taste)
  • 2 rice paper sheets (large)
  • avocado oil spray (for spraying generously)
  • 2 tbsp plain Greek yogurt
  • 1 tbsp mayonnaise
  • 1 tsp sriracha
  • 1 tsp honey
  • 0.5 tbsp lemon juice
  • 0.25 tsp garlic powder
  • sliced green onions (for serving (optional))
  • chili crisp or chili oil (for serving (optional))
  • sesame seeds (for serving (optional))

Steps

    In a bowl, combine the minced shrimp, cornstarch, sesame oil, soy sauce, grated garlic, chopped green onions, salt, and pepper.

    Dip a rice paper sheet in warm water for 3 to 5 seconds until slightly softened but still somewhat firm.

    Place the shrimp filling onto the rice paper and roll tightly.

    Cut the roll into bite-sized pieces.

    Lightly spray the pieces with avocado oil spray.

    Cook in the air fryer at 390°F (200°C) for 14 to 16 minutes, turning them halfway through, until golden brown and crispy.

    While the bites are cooking, whisk the Greek yogurt, mayonnaise, sriracha, honey, lemon juice, garlic powder, and salt in a small bowl until the sauce is smooth.

    Serve the bites hot, garnished with green onions and sesame seeds, accompanied by the dipping sauce.

Notes

Thoroughly dry the shrimp before mincing to prevent the filling from becoming watery. Do not over-soak the rice paper; it should feel slightly firm before wrapping. Spray generously with oil to achieve a crispy, bubbly finish.
