Whole Orange Blender Cake
An incredibly moist and soft cake made by blending a whole orange—peel and all—for a burst of fresh citrus flavor. This quick, one-blender recipe uses pantry staples and results in a perfectly balanced, not-too-sweet treat.

Ingredients
- 1 organic orange (large; washed and scrubbed thoroughly)
- 0.5 cup sugar (100 grams)
- 3 eggs (large, room temperature)
- 0.5 cup neutral oil (canola, vegetable, avocado, or grape seed oil)
- 1.5 cup self rising flour (or 1.5 cups AP flour with 1 tsp baking powder; or 2 cups almond flour with 1 tsp baking powder)
- 1 cup powdered sugar (for icing)
- 0.5 orange orange juice (freshly squeezed for icing)
- orange zest (for garnish)

Preheat your oven to 350°F (177°C). Grease a baking pan of your choice (loaf pan, round, or square).

Wash the organic orange thoroughly. Cut it into pieces with the peel still on, and remove any seeds.

Place the orange pieces and 1/2 cup sugar into a blender or food processor. Blend until the mixture is smooth and well-combined, about 20 seconds.

Add the 3 eggs and 1/2 cup oil to the blender. Blend again for less than 10 seconds until incorporated.

Add the 1 1/2 cups of self-rising flour. Pulse exactly two times; do not over-blend the flour to ensure the cake stays soft.

Pour the batter into the prepared greased baking pan. Tap the pan a couple of times on the counter to release air bubbles.

Bake in the preheated oven for 45-50 minutes. Perform a toothpick test by inserting it into the center; it is ready when the toothpick comes out clean.

While the cake is cooling, prepare the icing by combining 1 cup powdered sugar and the juice from 1/2 an orange in a bowl. Whisk until smooth. Adjust consistency by adding more juice for a runnier icing or more sugar for a thicker icing.

Once the cake has cooled completely, spread the icing over the top and garnish with fresh orange zest.

Notes
You can substitute self-rising flour with 1.5 cups all-purpose flour and 1 tsp baking powder. For a gluten-free version, use 2 cups almond flour and 1 tsp baking powder. Ensure the orange is organic since you are consuming the entire peel.
