Ingredients

  • 2 cup cooked white rice (leftover jasmine or basmati rice)
  • 1.5 tbsp chili crunch (or chili paste (adjust to taste))
  • 1 lb salmon fillet (skinless and boneless)
  • 0.5 cup teriyaki sauce (Soyaki brand recommended)
  • 4 Persian cucumbers (chopped)
  • 0.5 bunch fresh mint (chopped)
  • 0.5 bunch fresh cilantro (chopped)
  • 5 scallions (sliced)
  • 1 cup edamame (shelled)
  • 1 avocado (diced)
  • 0.25 cup soy sauce
  • 0.25 cup seasoned rice vinegar
  • 2 tbsp oil (for the dressing)
  • 1 tbsp brown sugar
  • 0.5 lime juice (juice of half a lime)
  • 1 clove garlic (grated)

Steps

    Preheat the oven to 400°F (200°C).

    In a bowl, mix the cooked rice with the chili crunch until well coated.

    Spread the rice onto a baking sheet lined with parchment paper.

    Place the salmon fillet on a second baking sheet and coat generously with teriyaki sauce.

    Place both sheets in the oven. Bake the salmon for 20 to 22 minutes until cooked through.

    Continue baking the rice for a total of about 40 minutes (20 additional minutes after the salmon is removed), stirring occasionally, until golden brown and very crispy.

    Meanwhile, prepare the dressing by whisking together the soy sauce, rice vinegar, oil, brown sugar, lime juice, and grated garlic in a small bowl.

    In a large salad bowl, combine the cucumbers, mint, cilantro, scallions, edamame, and avocado.

    Flake the cooked salmon with a fork and add it to the vegetables.

    Pour the dressing over the salad mixture and toss well.

    Just before serving, fold in the crispy rice to maintain its texture.

Notes

To make homemade Chili Crunch: Mix 1/2 cup dried garlic, dried onion, chili flakes, and toasted sesame seeds with 1/8 cup sugar, 1 tsp salt, 1 tbsp paprika, and 1/4 cup soy sauce. Heat 2 1/2 cups avocado oil to 340°F, carefully pour over the mixture, let sit for 10 minutes, and store in refrigerated jars.
