High Protein McGriddle Breakfast Cake
A higher protein homemade version of the classic McDonald's McGriddle flavors, made into a convenient breakfast bake that is light, fluffy, sweet, and salty.

Ingredients
- 1 cup flour (sub gluten-free if desired)
- 1 tbsp baking powder
- 2 eggs
- 0.5 cup cottage cheese
- 0.33 cup maple syrup
- 0.75 cup milk
- 0.5 lb ground breakfast sausage
- 1 cup shredded cheddar cheese
- maple syrup (for serving)

Preheat oven to 375°F (190°C). Grease an 8”x 8” baking dish and line it with parchment paper.

Heat a large skillet over medium-high heat. Add the ground breakfast sausage and cook until browned, breaking it into small pieces as it cooks. Once browned, set aside.

In a large mixing bowl, combine the flour, baking powder, eggs, cottage cheese, milk, and 1/3 cup maple syrup. Mix well until a cohesive batter forms.

Fold the cooked sausage and the shredded cheddar cheese into the batter.

Pour the batter into the prepared baking dish and spread it evenly to the edges.

Bake in the oven for 35-40 minutes, or until the top is slightly browned and a toothpick inserted into the center comes out clean.

Slice into squares and serve warm with extra maple syrup drizzled on top.
Notes
Variations: You can substitute cottage cheese for Greek yogurt and cow's milk for oat milk. For a heartier version, some users have successfully tripled the meat amount. This recipe can also be made in muffin tins for individual portions.
