Creamy Broccoli and Cheese Soup

Ingredients
- 4 broccoli (heads, separated into florets; reserve some boiled pieces for garnish)
- 1 onion (chopped)
- 4 garlic (cloves, crushed)
- 1 vegetable broth (cube or 1 tsp all-purpose seasoning (optional))
- 1 tbsp cornstarch (corn starch)
- 1 frasco Cheez Whiz (or your preferred processed cheese spread; amount to taste)
- 1 lata heavy cream (approx. 300g)
- salt and pepper (to taste)
- water (amount needed to barely cover the broccoli)
- 1 tbsp vegetable oil (for sautéing)
- cheddar cheese (shredded, for serving)
- red chili flakes (optional, for serving)

Separate the broccoli into small florets. Wash them by letting them soak in water with a bit of vinegar, then rinse well.

In a large pot, heat a bit of oil and sauté the chopped onion with the crushed garlic until fragrant.

Add the broccoli to the pot and sauté for a couple of additional minutes.

Pour water into the pot only until it barely covers the broccoli. Add the vegetable broth cube or all-purpose seasoning.

Boil until the broccoli is tender. Remove from heat and let it cool down well before the next step.

Transfer the broccoli along with all its cooking liquid to a blender. Blend until smooth and homogeneous.

Add the tablespoon of cornstarch to the blender and blend again to incorporate.

Return the mixture to the pot. Adjust salt and pepper to taste.

Bring the soup to a boil over medium heat, stirring constantly to prevent it from sticking to the bottom.

Once it starts boiling, add the Cheez Whiz (processed cheese) and stir until fully incorporated.

Add the can of heavy cream, mix well, and cook for one more minute until the desired consistency is reached.

Serve hot, garnishing with shredded cheddar cheese on top, reserved broccoli florets, and red chili flakes if desired.
Notes
It is very important to let the broccoli cool slightly before blending it with the cornstarch to avoid steam-related accidents and ensure a smooth texture. It is recommended to serve with crackers or toasted bread.
