Ingredients

  • 2 lb cleaned shrimp (Boiled; peeled and deveined)
  • 1 white onion (Cut into quarters for boiling the shrimp)
  • 4 dientes garlic (For boiling the shrimp)
  • 2 hojas bay leaves (For the cooking water)
  • 0.5 tbsp all-purpose seasoning (Or your preferred seasoning)
  • salt (To taste, for boiling the shrimp)
  • 16 oz buttermilk (One container)
  • 1 red onion (Large, thinly sliced)
  • 1 red bell pepper (Large; alternatively, use 2 medium peppers. Chopped)
  • hot chile pepper (Chopped to taste; leave the seeds in for extra heat)
  • 0.333 cup fresh cilantro (Chopped)
  • 1 lime juice (The juice of 1 lime, or to taste)
  • salt (To taste, for seasoning the ceviche)
  • 3 ripe plantains (Chopped)

Steps

    Prepare a large pot with enough water to cover the shrimp. Add the quartered white onion, garlic cloves, bay leaves, all-purpose seasoning, and salt to taste.

    Bring the seasoned water to a boil over high heat, until the spices and aromatics release an intense aroma.

    Add the shrimp to the boiling water. Cook only until they are pink, opaque, and firm, approximately 2 to 4 minutes, depending on their size. Avoid overcooking them.

    Remove the shrimp from the water and let them cool completely. Discard the cooking aromatics and, if the shrimp are large, cut them into bite-sized pieces.

    Place the cooled shrimp in a large bowl. Add the buttermilk, thinly sliced red onion, chopped red bell pepper, chopped hot chile pepper, and cilantro.

    Add the lime juice and salt to taste. Mix gently until the ingredients are evenly distributed without breaking up the shrimp.

    Add the chopped ripe plantains and mix carefully so they are incorporated without falling apart.

    Taste and adjust the salt, lime juice, and heat. Serve chilled, ideally after resting for a few minutes so the flavors can meld.

Notes

The original post indicates leaving the chile pepper seeds in if a spicier ceviche is desired. Keep the ceviche refrigerated and consume it the same day, as it contains cooked shrimp and buttermilk.
