Chicken Skewers Marinated with Garlic and Parsley Butter

Ingredients
- 1 Large chicken breast (Cut into large cubes)
- 3 tbsp Greek yogurt (Plain, unsweetened)
- 1 tbsp Paprika
- 1 tbsp Onion powder
- 1 tbsp Garlic powder
- 2 tsp Ground cumin
- Sea salt (To taste)
- Black pepper (To taste)
- 1 tbsp Curry powder
- 2 Lemons (Use only the zest)
- 125 g Butter (For coating the skewers at the end)
- 0.25 cup Fresh parsley (Chopped)
- 3 Garlic (Finely chopped)
- 1 tsp Vegetable oil (For cooking in the skillet, if necessary)

Cut the chicken breast into large, uniform cubes, approximately 3 to 4 cm, so they cook evenly.

Place the chicken in a large bowl. Add the Greek yogurt, paprika, onion powder, cumin, garlic powder, sea salt, pepper, lemon zest, and curry powder.

Mix very well until all the cubes are completely coated with the marinade.

Cover the bowl and let the chicken rest in the refrigerator for at least 3 hours; ideally, leave it overnight. This resting time allows it to absorb more flavor and become more tender.

Thread the marinated cubes onto skewers. If using wooden skewers, soak them in water beforehand to prevent them from burning.

Heat a large skillet over medium heat. Add the vegetable oil only if the skillet is not nonstick or if the chicken needs help browning.

Place the skewers in the skillet without overcrowding them. Cook them over medium heat, turning them as they brown, until golden brown on all sides and the center reaches 74 °C; this will take approximately 10 to 15 minutes, depending on the size of the cubes.

While the chicken cooks, melt the butter in a small skillet over low heat. Add the chopped garlic and cook for 1 to 2 minutes, until fragrant, without letting it burn.

Stir the chopped parsley into the garlic butter. Remove from the heat.

Remove the skewers from the heat and immediately coat them with the butter, garlic, and parsley mixture. Serve hot.
Notes
