Ingredients

  • 1 kg Honey
  • 3 tbsp Ground cayenne (The publication mentions Gourmet Chile cayenne.)
  • 1 tbsp Sesame seeds
  • 0.5 tsp Salt
  • 3 tbsp Vinegar (White vinegar or apple cider vinegar may be used.)
  • 2 tbsp Hot pepper sauce

Steps

  1. 1

Place the honey in a small saucepan. Heat it over low heat for a few minutes without letting it boil; it should become fluid and warm.

  2. 2

Add the ground cayenne and salt. Mix with a whisk or spoon until the cayenne is evenly distributed and the honey takes on a reddish color.

  3. 3

Add the vinegar and hot pepper sauce. Mix carefully until you have a homogeneous dressing; the vinegar will provide acidity that balances the sweetness.

  4. 4

Add the sesame seeds and stir to incorporate them.

  5. 5

Remove the saucepan from the heat and let the hot honey cool for a few minutes. Taste it while warm and adjust the heat or acidity only if desired.

  6. 6

Transfer the mixture to a clean jar with a lid and use it as a dressing or topping. If the honey thickens, warm the jar in a water bath or gently heat the portion you plan to use.

Notes

The publication indicates that these quantities yield approximately 1 kg and that the recipe can be prepared in a smaller quantity. The heating and storage instructions are a practical addition, since the description only provides the ingredients and their quantities.
