Carrot Cake Overnight Oats with Magic Shell

Ingredients
- 0.5 cup rolled oats (old-fashioned oats)
- 0.5 cup unsweetened plant milk (such as almond or soy milk)
- 1 scoop vegan protein powder (about 30 g; vanilla preferred)
- 0.5 carrot (small carrot, finely grated)
- 1 tbsp chia seeds
- 1 tbsp maple syrup (adjust to taste)
- 0.5 tsp ground cinnamon
- 0.25 tsp ground ginger
- 0.125 tsp ground nutmeg
- 1 tbsp dark chocolate (finely chopped or chocolate chips, for the magic shell)

- 1 tbsp walnuts (chopped, optional topping)
- 1 tbsp raisins (optional topping)

Stir thoroughly until the protein powder is dissolved and the carrot and chia seeds are evenly distributed. Scrape down the sides, cover, and refrigerate for at least 4 hours, preferably overnight, until thick and spoonable.
