Ingredients

  • 30 g instant rolled oats
  • 0.333 cup plant-based beverage or milk of choice
  • 20 g chocolate protein powder
  • 1 tsp unsweetened cocoa powder
  • 1 tsp chia seeds (For the base)
  • 1 tsp flax seeds
  • salt (1 pinch)
  • 2 tbsp low-fat yogurt
  • 0.5 tbsp zero-calorie sweetener (Stevia, monk fruit, or sugar-free syrup)
  • 2 tsp peanut butter
  • 4.5 raspberries (4–5 raspberries, mashed)
  • 0.5 tsp chia seeds (For the quick jam)
  • 10 g dark chocolate (Melted)
  • 5 g peanuts (Chopped; a small handful)

Steps

  1. 1

Prepare the chocolate base: in a small glass or ramekin, combine the oats, plant-based beverage, chocolate protein powder, cocoa powder, 1 teaspoon of chia seeds, flax seeds, and a pinch of salt. Stir until fully combined, then press down and smooth the mixture to create an even bottom layer.

  2. 2

Prepare the peanut butter cream: in a separate bowl, whisk the yogurt, sweetener, and peanut butter vigorously until perfectly smooth.

  3. 3

Spread the yogurt cream evenly over the chocolate oat base.

  4. 4

Prepare the quick jam: mash the raspberries and mix them with 1/2 teaspoon of chia seeds.

  5. 5

Spread the raspberry jam evenly over the yogurt and peanut butter layer.

  6. 6

Pour the melted dark chocolate over the surface, making sure it completely covers the jam.

  7. 7

Sprinkle the chopped peanuts directly over the still-melted chocolate.

  8. 8

Refrigerate for 1–2 hours, or overnight, until the chocolate shell has completely set.

  9. 9

Break the shell with a spoon and enjoy the overnight oats.

Notes

The original recipe does not specify how to melt the chocolate; melt it using your preferred method before adding it. The total time includes at least 1 hour of chilling.
