Ingredients
- 275 g all-purpose flour
- 0.5 tsp baking soda
- 0.25 tsp baking powder
- 1 tbsp cornstarch
- 0.75 cup dark brown sugar (packed)
- 3 tbsp granulated sugar
- 1 egg (large, cold)
- 1 egg yolk (cold)
- 125 g salted butter (melted and cooled)
- 2 tsp vanilla bean paste
- 1 cup semisweet chocolate chips (plus an unquantified amount for topping; reserve some from this quantity)
- 0.5 cup Nutella (for the filling)
Steps
- 1
In a bowl, whisk together the flour, baking soda, baking powder, and cornstarch. Set the dry mixture aside.
- 2
In a separate bowl, whisk the melted and cooled salted butter with the dark brown sugar and granulated sugar until combined.
- 3
Add the cold egg, cold egg yolk, and vanilla bean paste to the butter-sugar mixture. Whisk until smooth and glossy.
- 4
Gradually fold the dry ingredients into the wet mixture just until combined; do not overmix.
- 5
Fold in the semisweet chocolate chips, reserving some for the topping.
- 6
Grease and line an 8-inch round baking pan.
- 7
Press approximately half of the cookie dough into the bottom of the prepared pan, bringing it slightly up the sides.
- 8
Spread the Nutella in the center, leaving a border around the edges.
- 9
Cover the filling with the remaining cookie dough and seal the edges completely to prevent the Nutella from leaking out.
- 10
Press the reserved chocolate chips onto the top.
- 11
Bake at 350°F (175°C) for approximately 25–30 minutes, until the edges are golden brown and the center still looks slightly soft.
- 12
Let the cookie pie cool in the pan for at least 30–45 minutes before slicing so the center can set while the cookie stays soft and chewy.
Notes
The description does not specify the quantity of chocolate chips reserved for the topping; reserve some from the measured cup. Baking-pan greasing and lining are specified, but the ingredient used for this is not named.
