Ingredients
- 0.5 tsp Chili flakes (Optional)
- 500 g Minced beef or lamb (Choose beef or lamb)
- 1 Onion (Small, finely chopped)
- 4 cloves Garlic (Minced)
- 1 bunch Parsley (Small bunch, finely chopped)
- Skewers (Wooden or metal; enough to pierce the layered stack evenly)
- Olive oil (For brushing; amount not specified)
- 1 tbsp Paprika
- 1 tbsp Cumin
- Salt (To taste)
- Black pepper (To taste)
- 4 Large wraps (Squared; source also describes them as flatbreads)
- Tomato (Chopped; optional salad for serving, amount not specified)
- Mint (Chopped; optional salad herb, amount not specified)
- Garlic yogurt (Optional serving drizzle; amount not specified)
- Tahini (Optional alternative serving drizzle; amount not specified)
Steps
- 1
In a bowl, combine the minced beef or lamb, chopped onion, minced garlic, parsley, cumin, paprika, and optional chili flakes. Season with salt and black pepper to taste.
- 2
Mix thoroughly until the ingredients are evenly distributed through the meat.
- 3
Lay one wrap flat on a clean work surface. Spread a thin, even layer of the meat mixture over its surface.
- 4
Place another wrap on top and spread on another thin layer of meat. Repeat until you have 3–4 layers of wraps and meat.
- 5
Press gently on the stack to compress the layers. Refrigerate for 15 minutes so it firms up and is easier to slice.
- 6
Insert skewers evenly across the layered stack. Using a sharp knife, cut between the skewers to make individual layered skewers.
- 7
Brush the skewers lightly with olive oil.
- 8
Grill or bake at 200°C (390°F) for 20–25 minutes, turning occasionally, until the meat is fully cooked and the edges are crisp.
- 9
Serve with chopped tomato and mint salad on top or alongside. Optionally drizzle with garlic yogurt or tahini.
Notes
The source gives an alternative of minced beef or lamb and allows grilling or baking. It does not specify the amount of oil, salt, pepper, tomato, mint, garlic yogurt, or tahini. The optional salad is described as chopped tomato and herb (mint).
