Strawberry Mango Lemonade

- 1.25 cup sugar
- 1.25 cup water (for simple syrup)
- 2 lemon peels (from 2 lemons)
- 1 cup strawberries
- 2 mangoes (diced and peeled)
- 1 cup lemon juice (freshly squeezed (about 6-8 lemons))
- 0.25 cup cold water (for blending the fruit)
- 2 cup cold water (to dilute)
- ice (for serving)

In a medium saucepan, combine 1 1/4 cups sugar, 1 1/4 cups water, and the lemon peels.

Stir the mixture until the sugar dissolves.

Turn on low heat and simmer for 5 minutes.

Remove the saucepan from the heat and let the syrup steep for 15 minutes.

In a blender, combine the diced mangoes, 1/4 cup of cold water, and the strawberries.

Blend until the fruit mixture is completely smooth.

Strain the fruit puree 1-2 times through a fine-mesh sieve, depending on how thick you want the final drink to be.

In a large pitcher, combine the mango-strawberry puree, 1 cup of fresh lemon juice, and the prepared simple syrup.

Stir in 2 cups of cold water to dilute the lemonade to your desired strength and sweetness.

Taste the lemonade and adjust as needed, adding more lemon juice for tartness or more syrup if you have any remaining for sweetness. Serve over ice.
Notes
You can substitute the still water with sparkling water for a fizzy version. The author suggests straining the puree up to two times for a smoother texture.
