Ingredients
- 200 ml milk
- 25 g unsalted butter (Melted; allow to cool until barely warm.)
- 2 large eggs
- 50 g sugar
- 0.25 tsp salt
- 0.25 tsp vanilla extract
- 135 g glutinous rice flour
- 20 g tapioca starch (Also called tapioca flour.)
- 25 g unsalted butter (Softened, for greasing the molds.)
Steps
- 1
Melt 25 g of unsalted butter in a small saucepan or microwave-safe bowl. Set it aside and let it cool until it is just barely warm rather than hot.
- 2
In a mixing bowl, whisk the milk, eggs, sugar, salt, and vanilla extract until the eggs are fully incorporated and the mixture is smooth.
- 3
Pour in the barely warm melted butter and whisk until evenly combined.
- 4
Add the glutinous rice flour and tapioca starch. Whisk until you have a smooth, lump-free batter. Do not leave dry flour around the sides or bottom of the bowl.
- 5
Generously grease scalloped canelé-style or other small heatproof molds with the softened butter, coating the ridges and sides thoroughly. The scalloped edges provide more surface area for crisping.
- 6
Preheat the air fryer to approximately 180°C / 350°F. Preheating is important so the batter begins setting and browning immediately.
- 7
Divide the batter among the prepared molds, filling each only about two-thirds to three-quarters full to allow room for expansion.
- 8
Place the molds in the preheated air fryer and bake at 180°C / 350°F for about 18–22 minutes, or until the outside is deeply golden and caramelized and the centers are set but still soft and chewy. Air-fryer temperatures vary, so begin checking at 18 minutes.
- 9
Carefully remove the hot molds and let the butter tteok cool for several minutes. Unmold gently and serve warm, when the edges are crisp and the centers remain pleasantly chewy.
Notes
The source provides the ingredient list but does not state the air-fryer temperature or baking time in the supplied transcript. The temperature and time above are practical estimates; adjust for the size of the molds and your air fryer. Avoid overheating the melted butter before mixing it with the eggs.
