Weights are estimates. Together, the ingredients weigh about 780 g before cooking, which is about 195 g per serving.
Steps
Cut the chicken breasts into uniform bite-sized pieces.
In a medium bowl, combine the flour, cornstarch, salt, black pepper, and garlic powder. Whisk to ensure the seasonings are evenly distributed.
Add the chicken pieces to the flour mixture and toss thoroughly until every piece is well-coated. Shake off any excess flour.
Heat about 1/2 inch of neutral oil in a large skillet over medium-high heat. Once the oil is shimmering, add the chicken in a single layer, working in batches if necessary to avoid crowding the pan.
Fry the chicken for 3-4 minutes per side until golden brown, crispy, and cooked through (internal temperature of 165°F (74 °C) / 74°C (165 °F)). Remove the chicken from the pan and set aside on a paper towel-lined plate.
In a separate clean skillet or saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.
Pour in the heavy cream and bring to a gentle simmer. Let it cook for 2-3 minutes until slightly thickened.
Stir in the grated parmesan cheese until melted and the sauce is smooth.
Add the fried chicken pieces back into the skillet with the sauce. Toss gently to coat every piece of chicken in the garlic parmesan sauce.
Garnish with fresh chopped parsley and serve immediately.
Notes
For a spicier kick, add a pinch of red pepper flakes to the sauce. Ensure the oil is hot enough before adding the chicken to prevent it from becoming greasy.
