Ingredients

  • 1 lb Large shrimp (Peeled, deveined, and tails removed; pat dry)
  • 0.5 cup Cornstarch (For coating)
  • 0.25 cup All-purpose flour (For coating)
  • 1 Egg (Beaten)
  • 0.5 tsp Salt (For seasoning)
  • 0.25 tsp Black pepper (For seasoning)
  • 2 cup Neutral frying oil (Such as canola or vegetable oil; amount absorbed will vary)
  • 0.5 cup Mayonnaise (For the bang bang sauce)
  • 0.25 cup Sweet chili sauce (For the bang bang sauce)
  • 1 tbsp Sriracha (Adjust to taste)
  • 1 tbsp Lime juice (Freshly squeezed)
  • 2 Scallions (Thinly sliced, for garnish)

Steps

  1. 1

Pat the shrimp thoroughly dry with paper towels so the coating adheres and the oil does not splatter. Season the shrimp with the salt and black pepper.

  2. 2

In a bowl, whisk the egg until smooth. In a separate bowl, combine the cornstarch and flour.

  3. 3

Dip each shrimp into the beaten egg, allowing the excess to drip off. Transfer it to the flour-cornstarch mixture and toss until evenly coated. Place the coated shrimp on a plate while you finish the batch.

  4. 4

In a bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Taste and adjust the sriracha if you want more heat.

  5. 5

Pour the frying oil into a deep, heavy-bottomed skillet or Dutch oven and heat it to 350°F/175°C. Use a thermometer to maintain the temperature; overcrowding the pan will make the shrimp greasy rather than crisp.

  6. 6

Add the coated shrimp to the hot oil in batches, leaving space between them. Fry for about 2 to 3 minutes per side, turning once, until golden brown, crisp, and opaque throughout.

  7. 7

Transfer the fried shrimp to a wire rack set over a sheet pan or to a paper-towel-lined plate. Allow the oil to return to 350°F/175°C before frying the next batch.

  8. 8

Add the hot, crispy shrimp to the bowl of bang bang sauce and gently toss until lightly coated. Do not overmix, or the coating will soften.

  9. 9

Garnish with the sliced scallions and serve immediately, while the shrimp are still crisp.
