Oven-baked or air-fryer panzerotti made with a quick dough based on flour and Greek yogurt, filled with mozzarella, tomato passata, and vegetables of your choice. They are soft, cheesy, and ready without a long rising time.

Ingredients

  • 80 g Flour (The author recommends a mix of type 0 flour and whole wheat flour.)
  • 120 g Plain Greek yogurt
  • Salt (To taste.)
  • Herbs and spices (To taste; choose according to your preference.)
  • Baking soda (A pinch; optional, for slight leavening.)
  • Lemon juice (Enough to react with the baking soda; optional.)
  • 70 g Mozzarella
  • Tomato passata (As needed for the filling; optionally, also for the surface.)
  • Vegetables (Optional and your choice: escarole, spinach, eggplant, mushrooms, or pumpkin. They can be added to the filling or served on the side.)
  • Extra-virgin olive oil (Optional, a drizzle on the surface before cooking.)

    In a bowl, combine the flour, Greek yogurt, salt, and herbs and spices. If you want slight leavening, add a pinch of baking soda and a few drops of lemon juice.

    Mix and knead until you obtain a smooth, soft dough with no dry patches of flour.

    Let the dough rest for a few minutes. If you have time, you can let it rest for a few hours as well; the dough will become even softer. Alternatively, you can use it immediately.

    Divide the dough into two equal portions. Roll out each portion on a lightly floured surface, forming a thin circle.

    Place some of the tomato passata and mozzarella in the center of each circle. If using them, add the vegetables as well; alternatively, you can serve them on the side.

    Fold each circle into a half-moon, taking care not to let the filling escape. Seal the edges by folding and pressing them with your fingers or by crimping them with the tines of a fork.

    As desired, spread a little tomato passata over the surface or drizzle with extra-virgin olive oil.

    For oven baking, preheat a fan oven to 180 °C. Arrange the panzerotti on a baking sheet lined with parchment paper and bake for 15-20 minutes, until the dough is cooked and the surface is lightly golden.

    Alternatively, cook them in an air fryer preheated to 180 °C for 12-15 minutes, checking that they are golden on the outside and hot throughout, with melted, stretchy mozzarella inside.

Notes

The vegetables are optional, and no precise quantity is specified. The panzerotti can be eaten for lunch or dinner or taken to go. To prevent the filling from escaping, do not overfill the circles and seal the edges well.
