Ingredients
- 1 napa cabbage (whole, leaves separated)
- 1 apple (sliced)
- 1 onion (sliced)
- 2.5 slices ginger
- 2.5 cloves garlic
- 9 chicken drumsticks
- goji berries
- konjac rolls (optional)
- scallions (for sauce)
- ginger (for sauce)
- sesame oil (for sauce)
- salt (for sauce)
- soy sauce (for sauce)
- neutral oil (hot, for sauce)

Layer the napa cabbage leaves across the bottom of a large pot to create a base for the other ingredients.

Add the sliced onion and sliced apple over the cabbage layer.

Place the chicken drumsticks on top of the onion and apple layer.

Add the ginger slices and garlic cloves to the pot.

Cover the pot with a tight-fitting lid and cook over low heat for about 60 minutes. Do not add any water; the vegetables and fruit will release enough liquid to create a broth.

During the last few minutes of cooking, add the goji berries and optional konjac rolls to the pot.

To prepare the optional scallion-ginger sauce, place chopped scallions and minced ginger in a small bowl. Add sesame oil, salt, and soy sauce.

Carefully heat a small amount of neutral oil until shimmering, then pour the hot oil over the sauce ingredients and stir well to combine. Serve the sauce alongside the chicken and soup.
Notes
