Cozy Instant Pot Oxtail Soup
A comforting and naturally sweet oxtail soup made with red dates and honey dates. This family-friendly meal is easy to prepare in an Instant Pot and tastes even better the next day.

Ingredients
- 2 lb Oxtail (soaked to remove impurities)
- 1 lb Radish (such as daikon, peeled and sliced)
- 1 bunch Green onion (white parts for cooking, green parts for garnish)
- 1 Onion (whole or halved)
- 3 cloves Garlic (optional)
- 4 Red dates (jujubes)
- 2 Honey dates (makes the broth naturally sweet)
- 4 slices Ginger (divided)
- Water (enough to cover ingredients)
- Salt (to taste)
- White pepper (to taste)
- Chicken bouillon powder (to taste)
- Fried shallots (for garnish)

Soak the oxtail in a large bowl of water for about 30 minutes to draw out impurities. If you have time, soaking longer or overnight in the refrigerator is even better.

Place the oxtail in a pot with 2 slices of ginger and cover with water. Bring to a boil and let it cook for about 5 minutes to remove remaining impurities.

Drain the boiling water and rinse the oxtail thoroughly under cold running water.

Add the rinsed oxtail to the Instant Pot along with the onion, the white parts of the green onion, garlic (if using), red dates, and honey dates.

Add water to the Instant Pot until the ingredients are just covered, ensuring the liquid level stays below the maximum fill line.

Secure the lid and pressure cook on HIGH for 45 minutes.

Allow the pressure to release naturally for 20 minutes before opening the lid.

Skim off the excess oil and fat from the top of the broth using a spoon or fat separator.

Add the sliced radish to the pot. Use the simmer or sauté function to cook for about 20 minutes until the radish is soft.

Season the soup with salt, white pepper, and chicken bouillon powder to your personal taste.

Serve the soup hot with rice or noodles. Top each bowl with fried shallots, the green parts of the green onion, and an extra dash of white pepper.
Notes
Stovetop version: Follow the same initial steps, then simmer in a large pot for 2.5–3 hours until the oxtail is tender. Add the radish during the last 30 minutes of cooking. Tip: If serving to babies or toddlers not eating salt yet, remove their portion before seasoning the pot.
