Ingredients

  • 1 cup water
  • 0.5 cup unsalted butter (1 stick)
  • 2 tbsp granulated sugar (for the dough)
  • 0.25 tsp salt
  • 1 cup all-purpose flour
  • 2 eggs (large, room temperature)
  • 1 tsp vanilla extract
  • vegetable oil (for frying)
  • 0.5 cup granulated sugar (for coating)
  • 1 tbsp ground cinnamon
  • 4 oz dark chocolate (chopped, for dipping sauce)
  • 0.5 cup heavy cream (for dipping sauce)

Steps

    In a medium saucepan, combine the water, butter, 2 tablespoons of sugar, and salt. Bring the mixture to a boil over medium-high heat.

    Once boiling, reduce the heat to low and add the flour all at once. Stir vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan, about 1-2 minutes.

    Remove the pan from the heat and let the dough cool for about 5 minutes.

    Add the eggs one at a time, beating well after each addition until the dough is smooth and glossy. Stir in the vanilla extract.

    Transfer the dough to a large pastry bag fitted with a large star tip.

    In a shallow bowl, whisk together the 1/2 cup sugar and ground cinnamon for the coating; set aside.

    Heat about 2 inches of vegetable oil in a heavy pot or deep skillet to 375°F (190°C).

    Carefully pipe 4-6 inch lengths of dough into the hot oil, using kitchen shears to snip the dough at the tip. Do not overcrowd the pot.

    Fry the churros until golden brown and crispy on all sides, about 2 minutes per side.

    Use a slotted spoon to remove the churros and drain them briefly on paper towels.

    While still warm, roll the churros in the cinnamon sugar mixture until evenly coated.

    To make the dipping sauce, heat the heavy cream in a small saucepan until it just begins to simmer. Pour the hot cream over the chopped chocolate in a small bowl. Let sit for 1 minute, then whisk until smooth.

    Serve the warm churros immediately with the chocolate dipping sauce.

Notes

For the best texture, ensure your oil stays at a consistent temperature. If the oil is too cool, the churros will be greasy; if too hot, they will burn on the outside before cooking through.
