Ingredients

  • 2 slices ciabatta bread (thick-cut)
  • 2 tbsp whipped cowboy butter (for the outside of the bread)
  • 1 tbsp fig butter (for the inside of the bread)
  • 2 oz Gouda cheese (wax removed, sliced)
  • 2 oz Brie cheese (sliced)

Steps

  1. 1

Prepare the ciabatta bread by cutting two thick slices.

  2. 2

Spread a generous layer of fig butter on the inside of both slices of bread.

  3. 3

Layer the sliced Gouda (ensure the wax is removed) and Brie cheese onto one of the slices.

  4. 4

Close the sandwich and spread whipped cowboy butter evenly over the outside of both slices of bread.

  5. 5

Heat a skillet or griddle over medium heat.

  6. 6

Place the sandwich in the skillet. Cook until the bread is golden brown and crispy on the outside and the cheese is thoroughly melted.

  7. 7

Monitor the heat closely to ensure the bread doesn't burn before the cheese melts, as the butter and sugars in the fig jam can brown quickly.

  8. 8

Remove from heat, slice, and serve immediately while hot.

Notes

Cowboy butter typically contains butter mixed with garlic, lemon zest, dijon mustard, and herbs like parsley or chives. Using ciabatta provides a sturdy structure that holds up well to the heavy cheese and spreads.
