Ingredients
- 1.75 lb boneless skinless chicken breasts (whole; 1.5–2 lbs)
- 1 tsp garlic powder
- 1 tsp onion powder
- 0.5 tsp dried thyme
- 0.5 tsp black pepper
- 1 tsp salt (full amount for organic soup/bone broth, start with half for Campbell's)
- 2 can cream of chicken soup (10.5 oz each)
- 1.25 cup chicken broth (1–1.5 cups; use more broth if using more chicken)
- 16 oz frozen mixed vegetables (1 bag)
- 1 box Cheddar Bay biscuit mix (seasoning packet included)
- 0.75 cup milk
Steps
- 1
Add the whole chicken breasts to the crockpot and season them with the garlic powder, onion powder, thyme, black pepper, and salt.
- 2
Add the cream of chicken soup, chicken broth, and frozen mixed vegetables to the pot.
- 3
Give the mixture one stir, then place the lid on the crockpot.
- 4
Cook on high for 3 hours or on low for 6 hours.
- 5
Once cooked, shred the chicken right in the pot using two forks and stir it back into the sauce. Taste the filling and adjust the salt if needed.
- 6
Remove the lid and leave the crockpot on high for 10 minutes to allow the sauce to thicken while you prepare the biscuit dough.
- 7
In a separate bowl, stir together the biscuit mix, the included seasoning packet, and the milk until just combined and lumpy.
- 8
Drop spoonfuls of the dough on top of the chicken filling. Ensure they rest on the surface and are not pushed down into the liquid.
- 9
Place a paper towel across the top of the crockpot (to catch condensation), then place the lid over it. Cook on high for 1 hour without peeking.
- 10
Take the lid off and let it sit for 10 more minutes, then allow the dish to rest for 5 minutes before serving.
- 11
Scoop the pot pie into bowls, ensuring everyone gets a biscuit on top.
Notes
The paper towel trick is essential for slow cooker biscuits to prevent them from becoming soggy from lid condensation. If using standard canned soup (like Campbell's), start with only half the salt as those soups are already quite salty.
