Ingredients

  • 800 g Chicken breast (cut into bite-sized pieces)
  • 0.5 cup 0% fat Greek yogurt (for the marinade)
  • 2 tbsp Lemon juice (for the marinade)
  • 1 tbsp Olive oil (for the marinade)
  • 4 Garlic (finely minced)
  • 2 tsp Dried oregano (for the marinade)
  • 2 tsp Paprika (for the marinade)
  • 1.5 tsp Salt (for the marinade)
  • 1 tsp Black pepper (for the marinade)
  • 1200 g Potatoes (cut into small cubes)
  • Olive oil spray (a few sprays for the potatoes)
  • 2 tsp Dried oregano (for the potatoes)
  • 1 tbsp Garlic powder (for the potatoes)
  • 2 tsp Paprika (for the potatoes)
  • 1 tsp Salt (for the potatoes)
  • 0.5 tsp Black pepper (for the potatoes)
  • 1 tbsp Lemon juice (to finish the potatoes)
  • 1 Cucumber (large, diced for the salad)
  • 2 Tomatoes (medium, diced)
  • 0.5 Red onion (medium, sliced)
  • 2 tbsp Parsley (chopped)
  • 1 tbsp Lemon juice (for the salad)
  • Salt (a pinch for the salad)
  • 1.5 cups 0% fat Greek yogurt (for the tzatziki)
  • 0.5 Cucumber (grated and squeezed dry, for the tzatziki)
  • 2 Garlic (cloves grated for the tzatziki)
  • 1 tbsp Lemon juice (for the tzatziki)
  • 0.5 tsp Salt (for the tzatziki)
  • Black pepper (a pinch for the tzatziki)
  • Dill (to taste for the tzatziki)

Steps

    In a large bowl, combine the chopped chicken, Greek yogurt, olive oil, lemon juice, minced garlic, oregano, paprika, salt, and pepper.

    Mix all the marinade ingredients well to ensure the chicken is evenly coated and let marinate for at least 30 minutes.

    If available, thread the marinated chicken pieces onto skewers.

    Cut the potatoes into small cubes and place them in a bowl. Season with oregano, garlic powder, paprika, salt, pepper, and spray with olive oil.

    Cook the potatoes in the air fryer at 400°F (200°C) for 20 minutes, shaking the basket halfway through for even cooking.

    When the potatoes are finished cooking, drizzle them with 1 tablespoon of lemon juice.

    Cook the chicken in the air fryer at 400°F (200°C) for 12 minutes or until fully cooked and slightly golden on the outside.

    For the Greek salad, chop the cucumber, tomatoes, red onion, and parsley. Place them in a bowl with lemon juice and a pinch of salt, and mix well.

    For the tzatziki, grate half a cucumber and squeeze it with paper towels or a clean kitchen cloth to remove as much water as possible.

    In a small bowl, mix the squeezed cucumber with the Greek yogurt, grated garlic, lemon juice, dill, salt, and pepper until smooth.

    Divide the potatoes, chicken, salad, and tzatziki equally into 4 bowls and serve immediately.

Notes

If you don't have an air fryer, you can bake the chicken and potatoes at the same temperature, although the cooking time may increase slightly. Make sure to squeeze the cucumber very well for the tzatziki to prevent the sauce from becoming watery.
