Ingredients

  • 800 g Chicken breast (cut into bite-sized pieces)
  • 0.5 cup 0% Greek yogurt (for the marinade)
  • 2 tbsp Lemon juice (for the marinade)
  • 1 tbsp Olive oil (for the marinade)
  • 4 Garlic (minced cloves for the marinade)
  • 2 tsp Dried oregano (for the marinade)
  • 2 tsp Paprika (for the marinade)
  • 1.5 tsp Salt (for the marinade)
  • 1 tsp Black pepper (for the marinade)
  • 1200 g Potatoes (finely diced)
  • Olive oil spray (a few sprays for the potatoes)
  • 2 tsp Dried oregano (for the potatoes)
  • 1 tbsp Garlic powder (for the potatoes)
  • 2 tsp Paprika (for the potatoes)
  • 1 tsp Salt (for the potatoes)
  • 0.5 tsp Black pepper (for the potatoes)
  • 1 tbsp Lemon juice (to finish the potatoes)
  • 1 large Cucumber (chopped for the salad)
  • 2 medium Tomatoes (chopped for the salad)
  • 0.5 medium Red onion (sliced for the salad)
  • 2 tbsp Parsley (chopped for the salad)
  • 1 tbsp Lemon juice (for the salad)
  • Salt (a pinch for the salad)
  • 1.5 cups 0% Greek yogurt (for the tzatziki)
  • 0.5 Cucumber (grated and squeezed for the tzatziki)
  • 2 Garlic (grated cloves for the tzatziki)
  • 1 tbsp Lemon juice (for the tzatziki)
  • 0.5 tsp Salt (for the tzatziki)
  • Black pepper (a pinch for the tzatziki)
  • Dill (mentioned in instructions for the tzatziki)

Steps

    In a bowl, combine the chicken, yogurt, olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.

    Mix well and let marinate for at least 30 minutes. If using skewers, thread the chicken onto them.

    Dice the potatoes into small cubes and season them with oregano, garlic powder, paprika, salt, pepper, and olive oil spray.

    Cook the potatoes in the air fryer at 400°F (200°C) for 20 minutes, shaking the basket halfway through. When finished, drizzle with lemon juice.

    Cook the chicken in the air fryer at 400°F (200°C) for 12 minutes or until fully cooked and lightly browned on the outside.

    Chop the cucumber, tomatoes, red onion, and parsley. Place them in a bowl with lemon juice and a pinch of salt, and mix well.

    For the tzatziki, grate the cucumber and squeeze out as much water as possible using paper towels or a clean kitchen towel.

    Add the squeezed cucumber to a bowl with the Greek yogurt, garlic, lemon juice, dill, salt, and pepper. Mix until smooth.

    Divide the potatoes, chicken, salad, and tzatziki equally into 4 bowls and serve.

Notes

If you don't have an air fryer, you can bake the chicken and potatoes, though cooking times may vary. Make sure to squeeze the cucumber very well for the tzatziki to prevent the sauce from becoming watery.
