- 1 tsp black pepper (For the filling)
- 1 tsp smoked paprika powder (For the filling)
- salt (To taste, for the filling)
- 20 slices white bread (The source allows 20–25 slices)
- 10 slices cheddar cheese
- 10 slices provolone cheese
- butter (For toasting the sandwiches)

Steps
- 1
Place the boneless chicken breast in a bowl. Add salt, smoked paprika powder, black pepper powder, garlic powder, and onion powder.
- 2
Drizzle the 2 tablespoons of oil over the chicken and mix thoroughly until the chicken is evenly coated with the seasonings.
- 3
Heat a pan and add additional oil for cooking. Add the seasoned chicken and cook for 12–15 minutes, or until fully cooked and spreadable.
- 4
Remove the cooked chicken from the pan and shred it.
- 5
In a bowl, combine the shredded chicken, boiled and cubed carrots, diced cabbage, sliced green onion, chopped parsley, and diced red onion.
- 6
Add the mayonnaise, sour cream, Dijon mustard, garlic powder, black pepper, smoked paprika powder, and salt to the bowl.
- 7
Mix the filling thoroughly until all of the ingredients are evenly combined.
- 8
Place a layer of the chicken filling on one slice of white bread.
- 9
Place one slice of cheddar cheese on top of the chicken filling.
- 10
Add more chicken filling on top of the cheddar, then place one slice of provolone cheese over the filling.
- 11
Close the sandwich with another slice of white bread. Repeat the assembly for the remaining sandwiches.
- 12
Add some butter to a pan and heat it over medium-low heat.
- 13
Place a sandwich in the pan and toast for 3–4 minutes on each side, until the bread is crispy and golden. Repeat with the remaining sandwiches, adding more butter as needed.
- 14
Serve the toasted chicken melt sandwiches with fries and enjoy.
Notes
The source does not specify the exact amount of additional cooking oil or butter, nor the amount of fries. It also does not specify the exact number of sandwiches produced; the cheese quantities suggest approximately 10 sandwiches, while the bread quantity allows 10–12 sandwiches.
