Crockpot Street Corn Chicken Pasta

Ingredients
- 2 lb Chicken breasts
- Garlic salt (To taste)
- Black pepper (To taste)
- Garlic powder (To taste)
- Onion powder (To taste)
- Tajín seasoning (To taste, plus more for mixing and topping)
- 2 cans Mexican-style street corn (Drained; approximately 18 oz drained weight total)
- 8 oz Cream cheese (1 block)
- 1 cup Chicken broth
- 1 lb Penne pasta (Cooked before adding to the crockpot; quantity refers to the listed pasta amount)
- 2 cups Pepper jack cheese (Shredded)
- 1 cup Sour cream
- 1 cup Mayonnaise
- Fresh cilantro (For topping; amount to taste)
- Tajín seasoning (Extra, for topping)

Place the chicken breasts in a slow cooker. Season them to taste with garlic salt, black pepper, garlic powder, onion powder, and Tajín, distributing the seasonings over both sides as evenly as possible.

Add the drained Mexican-style street corn to the slow cooker around and over the chicken.

Add the cream cheese and pour in the chicken broth. The cream cheese may remain in a block at this stage; it will soften as it cooks.

Cover the slow cooker and cook on HIGH for about 3 hours, or until the chicken is tender and reaches an internal temperature of 165°F (74°C).

Shred the cooked chicken directly in the slow cooker using two forks. Stir it through the corn, broth, and softened cream cheese until distributed.

Add the cooked penne pasta to the slow cooker.

Add the shredded pepper jack cheese, sour cream, mayonnaise, and a little additional Tajín.

Mix thoroughly until the pasta and chicken are coated in a creamy, well-combined sauce and the pepper jack cheese has melted. If the sauce is very thick, loosen it with a small splash of additional broth.

Finish with extra Tajín and fresh cilantro. Serve while hot.
Notes
The pasta is cooked separately before being added to the slow cooker. Because the chicken is cooked on HIGH for 3 hours, avoid leaving the slow cooker unattended beyond the stated cooking time without checking doneness and moisture.
