Ingredients
- 5 cup fruit (strawberries and mangos recommended; 4-6 cups total)
- 5 tbsp honey (4-6 tbsp total)
- 4 tbsp lemon juice

Place the fruit, honey, and lemon juice in a food processor or blender.

Blend the mixture until it is completely smooth.

Transfer the mixture to a saucepan and simmer on low heat for 15–20 minutes until it has slightly thickened.

Preheat your oven to 170°F (75°C).

Line a baking sheet with parchment paper.

Pour the thickened fruit mixture onto the prepared baking sheet, spreading it out into a thin, even layer.

Bake at 170°F for 4–6 hours until the fruit leather is no longer sticky to the touch.

Remove from the oven and let cool completely before peeling the sheet off the parchment and cutting into strips or shapes.
Notes
The recipe suggests using strawberries and mangos, but most soft fruits will work. Ensure the layer is spread thinly and evenly to avoid wet spots. The long bake time acts as a dehydration process.
