Ingredients
- 1 ripe pineapple (whole, diced)
- 1 cup pineapple juice
- 14 oz sweetened condensed milk (1 can)
- 14 oz cream of coconut (1 can; can also use coconut cream (ensure it is not bitter))
- 0.25 cup granulated sugar (optional, adjust for sweetness)
- 2 cup water
- 0.5 cup pineapple (diced, to go in the drink)
Steps
- 1
Cut the whole ripe pineapple into chunks. Set a few chunks aside for garnish if desired.
- 2
In a blender, combine the fresh pineapple chunks, 1 cup of pineapple juice, 14 oz of coconut cream, 14 oz of sweetened condensed milk, and 1/4 cup of sugar.
- 3
Blend the mixture until it is completely smooth and creamy.
- 4
Taste the mixture and add more condensed milk or sugar if you prefer a sweeter profile.
- 5
Strain the blended mixture into a large pitcher filled with ice.
- 6
Add the 1/2 cup of diced pineapple to the pitcher, mix well, and serve immediately.
Notes
The sugar is optional depending on the sweetness of your fruit and the brand of coconut cream used. Ensure you use a high-quality, non-bitter coconut cream for the best flavor.
