Ingredients

  • 0.5 tbsp paprika (divided)
  • 0.5 tsp cumin (divided)
  • 0.5 tsp garlic powder (divided)
  • 0.5 tsp onion powder (divided)
  • 0.5 tsp salt (divided)
  • 0.5 tsp black pepper (divided)
  • 0.5 tsp dried oregano (divided)
  • 0.5 tsp chilli powder (divided)
  • 0.5 red onion (broken up for roasting)
  • 1 red bell pepper (sliced for roasting)
  • 150 g chicken breast (raw weight)
  • cooking oil spray (to spritz roasting dish)
  • 1 tomato (finely diced)
  • 0.5 shallot (finely diced)
  • 0.25 tsp fresh garlic (minced)
  • lemon juice (to taste (author uses a generous amount))

  • 50 g iceberg lettuce (shredded)
  • 80 g sweetcorn (canned or cooked)
  • 25 g sour cream

    In a small bowl, combine the paprika, cumin, garlic powder, onion powder, salt, pepper, oregano, and chilli powder to create the taco seasoning mix.

    Lightly spritz a roasting dish with cooking oil spray.

    Add the 1/2 red onion and 1 red pepper to the dish, breaking them up into bite-sized pieces.

    Sprinkle half of the prepared seasoning mix over the vegetables and shake the dish to coat them evenly.

    Place the 150g chicken breast into the roasting dish and coat it with the remaining half of the seasoning mix.

    Place the dish in the oven and roast at 200°C for approximately 20 minutes, or until the chicken is just cooked through and moist.

    While the chicken is roasting, prepare the salsa by finely dicing the tomato and shallot.

    In a small bowl, combine the diced tomato, shallot, 1/4 tsp fresh minced garlic, a generous squeeze of lemon juice, and a pinch of salt, pepper, and oregano. Mix well and set aside.

    Assemble the bowl by layering the 50g of shredded iceberg lettuce at the bottom.
