Healthy Homemade Nando's Style Platter
A high-protein, lower-calorie version of a Nando's feast featuring spicy rice, air-fried chips, peri-peri chicken, and minty garlic peas.

Ingredients
- 200 g potatoes (cut into chips)
- 0.5 tsp salt (peri-peri salt preferred)
- 140 g chicken breast
- 20 g Nando’s sauce (peri-peri sauce)
- 0.25 red onion (diced)
- 0.25 bell pepper (diced)
- 1 tsp fresh garlic (minced)
- 1 tsp tomato puree
- 50 g rice (uncooked weight)
- 180 ml chicken stock (plus extra water if needed)
- 0.125 tsp salt (for rice)
- 0.125 tsp pepper (for rice)
- 0.125 tsp paprika (for rice)
- 0.125 tsp cumin (for rice)
- 0.125 tsp oregano (for rice)
- 100 g peas
- 1 tsp garlic (minced, for peas)
- fresh mint (handful, chopped)
- 1 lemon juice (juice of 1 lemon)

Prepare the chips by slicing 200g of potatoes into chip shapes. Season with 1/2 tsp salt (or peri-peri salt) and air fry or bake until golden and crispy.

Coat 140g of chicken breast in 20g of Nando’s peri-peri sauce. Cook in a pan or air fryer until the internal temperature reaches 165°F (74°C).

For the spicy rice, sauté 1/4 diced red onion and 1/4 diced bell pepper in a pan until softened.

Add 1 tsp fresh minced garlic and 1 tsp tomato puree to the vegetables and cook for 1 minute until fragrant.

Add 50g of rice, 180ml chicken stock, and 1/8 tsp each of salt, pepper, paprika, cumin, and oregano. Bring to a boil, then reduce heat, cover, and simmer until the liquid is absorbed and rice is tender.

Prepare the peas by cooking 100g of peas with 1 tsp garlic. Once cooked, mash or mix with a handful of fresh mint and the juice of 1 lemon.

Plate the chicken, chips, spicy rice, and peas together to serve.
