Crispy Rice Bowl with Yum Yum Sauce

Ingredients
- 120 g chicken breast (boiled for 15-20 minutes and shredded)
- 55 g white rice (raw weight; cooked before crisping in the oven)
- soy sauce (a splash, for the rice)
- garlic granules (to taste, for the rice)
- 30 g mixed leaves (chopped fairly fine)
- 200 g cucumber (very thinly sliced)
- 0.5 carrot (grated)
- 1 tomato (diced)
- 40 g edamame beans
- 30 g 0% fat Greek yoghurt
- 30 g light mayo
- 15 g reduced sugar sweet chilli sauce
- 5 g sriracha
- water (added to sauce to reach desired consistency)

Place the chicken breast in a pot of water and boil for 15 to 20 minutes until fully cooked through.

Preheat your oven to 180°C (350°F).

Prepare the rice by spreading the cooked rice onto a baking tray. Add a splash of soy sauce and garlic granules, then mix well.

Spread the rice out as thinly as possible on the tray and bake for 15 to 20 minutes until crispy.

While the rice and chicken cook, prepare the sauce by mixing the Greek yogurt, light mayo, sweet chili, and sriracha in a small bowl.

Gradually add a little water to the sauce, mixing until you reach your desired drizzling consistency.

Prep the vegetables: finely chop the mixed leaves, thinly slice the cucumber, grate the half carrot, and dice the tomato.

Assemble the base of the bowl by combining the chopped leaves, cucumber, carrot, tomato, and edamame beans.

Once the chicken is cooked, shred it using two forks or a hand mixer.

Add the shredded chicken and the crispy rice to the bowl.
