Ingredients

  • 120 g chicken breast (boiled for 15-20 minutes and shredded)
  • 55 g white rice (raw weight; cooked before crisping in the oven)
  • soy sauce (a splash, for the rice)
  • garlic granules (to taste, for the rice)
  • 30 g mixed leaves (chopped fairly fine)
  • 200 g cucumber (very thinly sliced)
  • 0.5 carrot (grated)
  • 1 tomato (diced)
  • 40 g edamame beans
  • 30 g 0% fat Greek yoghurt
  • 30 g light mayo
  • 15 g reduced sugar sweet chilli sauce
  • 5 g sriracha
  • water (added to sauce to reach desired consistency)

    Place the chicken breast in a pot of water and boil for 15 to 20 minutes until fully cooked through.

    Preheat your oven to 180°C (350°F).

    Prepare the rice by spreading the cooked rice onto a baking tray. Add a splash of soy sauce and garlic granules, then mix well.
