Spicy Shrimp Rangoon Nachos

Ingredients
- 9 oz shrimp (peeled and deveined)
- 8 oz cream cheese
- 2 green onions (finely sliced)
- 2 cloves garlic (very finely minced)
- 1 tsp soy sauce
- 1 tsp sugar
- 1 tsp sesame oil
- salt (to taste)
- black pepper (to taste)
- 1 tsp hot sauce
- 1 tsp chili flakes
- 1 tsp ponzu (optional)
- 0.25 tsp MSG (optional)
- wonton wrappers (wrappers labeled for frying preferred)
- water (for sealing)
- neutral oil (for frying)
- sweet chili sauce (for topping)
- chili mayo (for topping)
- green onions (extra for topping)
- 1 fresh green chili (sliced)
- sesame seeds (mix of black and white)

Cook the shrimp in a pan with a little salt and pepper until they just turn pink. Be careful not to overcook them.

Remove the shrimp from the pan and pat them completely dry with paper towels to remove excess moisture.

Finely chop the cooked shrimp into small pieces.

In a mixing bowl, combine the chopped shrimp with cream cheese, minced garlic, sliced green onions, soy sauce, ponzu (if using), MSG (if using), sugar, pepper, hot sauce, and chili flakes. Mix until well combined.

Place about 1 to 1.5 teaspoons of the shrimp filling onto each wonton wrapper.

Wet the edges of the wonton wrapper with water and seal tightly, pressing out any air to prevent bursting.

Place the filled wontons in the freezer for 20 to 30 minutes until they are firm but not rock solid. This step is crucial to prevent them from bursting during frying.

Heat neutral oil in a pot or deep fryer to 340–350°F (170–175°C).

Fry the wontons in small batches for 2 to 3 minutes until they are golden brown and crispy.

Drain the fried wontons on paper towels.

Serve the wontons drizzled with chili mayo and sweet chili sauce. Top with fresh sliced green chili and a mix of black and white sesame seeds.
Notes
Freezing the wontons for 20-30 minutes before frying is a key tip to prevent the filling from expanding and bursting the wrapper. Regular wonton wrappers work, but those labeled for frying often result in a crispier texture.
