Ingredients
- 0.5 pack pappardelle pasta (Cook according to package instructions)
- 2.5 tbsp olive oil (Source gives 2–3 tbsp)
- 11 fresh garlic cloves (Source gives 10–12 cloves)
- 2 shallots (Sliced)
- 1 cup cherry tomatoes
- 2 tbsp tomato paste
- 1.5 red chili flakes (The source gives 1 1/2 but does not specify a unit)
- salt and black pepper (To taste; salt is also used in the pasta cooking water)
- 0.5 cup pasta cooking water (Reserved after boiling the pasta)
- 0.5 cup Parmesan cheese (Some is added to the sauce and some is used as garnish)
- fresh basil (Freshly chopped; amount not specified)
- 0.5 cup unsweetened heavy whipping cream
Steps
- 1
Boil the pappardelle in salted water according to the package instructions. Before draining, reserve 1/2 cup of the pasta cooking water for the sauce.
- 2
Heat the olive oil in a pan over medium heat.
- 3
Add the cherry tomatoes, sliced shallots, and garlic to the pan. Sauté, stirring occasionally, for about 5 minutes, until the vegetables are sweating and translucent.
- 4
Add the tomato paste, reserved pasta water, red chili flakes, salt, and pepper. Let the mixture simmer for 1 minute.
- 5
Transfer the tomato mixture to a blender and blend until smooth.
- 6
Pour the smooth sauce back into the pot.
- 7
Add the Parmesan cheese and heavy whipping cream to the sauce, then stir to combine.
- 8
Top the sauce with freshly chopped basil.
- 9
Add the boiled pasta to the sauce and gently toss until the noodles are coated.
- 10
Garnish with additional Parmesan cheese and serve.
Notes
The source does not specify the package size for “half pack pasta” or a unit for the red chili flakes. It also does not give a precise amount of basil. Use caution when blending hot sauce; blend in batches if needed and vent the blender safely.
