Ingredients

  • 4 lb boneless chuck roast (Trimmed and cut into 1-inch chunks)
  • 2 onions (Diced)
  • 1 green bell pepper (Seeded and diced)
  • 5 garlic cloves (Minced)
  • 3 tbsp vegetable oil
  • 1 jalapeno pepper (Minced; remove seeds and membrane for less heat)
  • 2 tbsp ground cumin
  • 3 tbsp chili powder
  • chipotle pepper in adobo sauce (Minced; source says “tablespoon” but omits the numeral)
  • 2 cup white corn (If using canned corn, drain)
  • 28 oz crushed tomatoes (Tuttorosso Italian Inspirations Crushed Tomatoes Chunky Style)
  • 14.5 oz petite diced tomatoes (Tuttorosso)
  • 6 oz tomato paste (Tuttorosso)
  • 2 cup water
  • salt and black pepper (To taste)
  • green onions (Sliced, for garnish)
  • fresh cilantro (Chopped, for garnish)
  • jalapeno peppers (Sliced, for garnish)
  • cheddar cheese (Grated, for garnish)
  • lime wedges (For serving)

Steps

  1. 1

Heat the vegetable oil over medium heat in a large Dutch oven.

  2. 2

Season the cubed chuck roast with salt and black pepper.

  3. 3

Brown the meat in small batches for about 10 minutes, turning so all sides are browned. Do not overcrowd the pot. Set the browned meat aside.

  4. 4

Add the diced onions, minced garlic, diced green bell pepper, and minced jalapeno to the pot. Cook for 8 minutes.

  5. 5

Add the ground cumin, chili powder, and minced chipotle pepper in adobo sauce. Stir to combine, then cook for 5 minutes.

  6. 6

Return the browned meat to the pot with the onion mixture.

  7. 7

Add the white corn, crushed tomatoes, petite diced tomatoes, tomato paste, and water.

  8. 8

Season with additional salt and black pepper to taste. Bring the chili to a boil, then cover the Dutch oven.

  9. 9

Reduce the heat and simmer for 2 hours, stirring occasionally while it simmers.

  10. 10

Serve the chili with sliced green onions, chopped fresh cilantro, sliced jalapeno peppers, grated cheddar cheese, and lime wedges.

Notes

The source also provides a pressure-cooker option: brown the meat on the Sauté setting; cook the onions, garlic, green pepper, and jalapeno for 8 minutes; add the seasonings, beef, and remaining ingredients except the corn. Cover and cook on the Chili setting for 45–50 minutes. Let the pressure release naturally for 15–19 minutes, then quick-release any remaining pressure. Add the corn and cook for 5–10 minutes. The chipotle ingredient is printed as “tablespoon” without a numeral, so its exact quantity is unclear.
