  • 1 lb chicken breast (cut into bite-sized pieces)
  • 2 tbsp olive oil
  • 3 garlic (minced)
  • 0.5 cup sun-dried tomatoes (chopped, oil-packed)
  • 1 tsp dried oregano
  • 0.5 tsp red pepper flakes (adjust to taste)
  • 8 oz spaghetti (dry noodles)
  • 2.5 cup chicken broth
  • 0.5 cup heavy cream
  • 0.5 cup parmesan cheese (grated)
  • 0.25 cup fresh basil (chopped for garnish)
  • salt and black pepper (to taste)

Steps

    Heat the olive oil in a large skillet or deep pan over medium-high heat. Add the bite-sized chicken pieces and season with salt and pepper. Sauté until the chicken is browned and cooked through, about 5-6 minutes.

    Add the minced garlic, chopped sun-dried tomatoes, dried oregano, and red pepper flakes to the pan with the chicken. Stir and cook for 1-2 minutes until the garlic is fragrant.

    Pour in the chicken broth and heavy cream. Stir to combine and bring the liquid to a gentle simmer.

    Add the dry spaghetti noodles to the pan. If they don't fit, you can snap them in half. Press them down into the liquid to ensure they are mostly submerged.

    Reduce the heat to medium-low, cover the pan, and cook for 8-10 minutes. Stir occasionally to prevent the noodles from sticking together or to the bottom of the pan.

Notes

If the sauce becomes too thick before the pasta is finished cooking, add an extra splash of chicken broth or water. For a vegetarian version, omit the chicken and use vegetable broth.
