One-Pan Creamy Pasta Secrets

Ingredients
- 200 g pasta (such as fusilli or penne)
- 2 cup water (or enough to just cover the pasta)
- 0.5 cup heavy cream
- 0.25 cup parmesan cheese (grated)
- 2 garlic (cloves, minced)
- 1 tbsp olive oil
- salt (to taste)
- black pepper (to taste)
- 1 tbsp fresh parsley (chopped, for garnish)

In a large skillet or pan, heat the olive oil over medium heat.

Add the minced garlic to the pan and sauté for about 1 minute until fragrant, being careful not to burn it.

Add the dry pasta directly into the skillet.

Pour in the water and add a pinch of salt. Ensure the pasta is mostly submerged.

Bring the liquid to a boil, then reduce the heat to a simmer. Cook for about 8-10 minutes, stirring occasionally to prevent sticking, until the pasta is al dente and most of the water has been absorbed.

Stir in the heavy cream and grated parmesan cheese.

Continue to cook for another 1-2 minutes, stirring constantly, until the sauce thickens and coats the pasta evenly.

Notes
The secret to this recipe is the starch released by the pasta as it cooks in a small amount of water, which helps emulsify the cream and cheese into a silky sauce. If the pan gets too dry before the pasta is cooked, add a splash more water.
