Ingredients
- 4 oz dark chocolate (melted)
- 0.5 cup unsalted butter (melted)
- 0.5 cup brown sugar (packed)
- 0.5 cup granulated sugar
- 0.5 cup all purpose flour
- 0.25 cup cocoa powder
- 3 eggs (large)
- 1 tsp vanilla extract
- 1 tsp cornstarch
- 0.25 tsp salt
- 2 shots espresso
- cocoa powder (for topping)
- 8 oz mascarpone cheese
- 0.66 cup heavy whipping cream (whipped)
- 1.33 cup powdered sugar
- 1 tsp vanilla extract
Steps
- 1
Preheat your oven to 350°F (175°C) and grease or line an 8x8 inch baking pan with parchment paper.
- 2
In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until well combined.
- 3
Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract and the melted dark chocolate.
- 4
Sift in the all-purpose flour, cocoa powder, cornstarch, and salt. Fold the dry ingredients into the wet mixture until just combined; do not overmix.
- 5
Pour the brownie batter into the prepared baking pan and smooth the top.
- 6
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Allow the brownies to cool completely in the pan.
- 7
Once cooled, brush or pour the 2 shots of espresso over the top of the brownies, allowing the liquid to soak in.
- 8
Prepare the frosting by whipping the heavy cream in a chilled bowl until stiff peaks form. Set aside.
- 9
In another bowl, beat the mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy.
- 10
Gently fold the whipped cream into the mascarpone mixture until fully incorporated.
- 11
Spread the mascarpone frosting evenly over the cooled, espresso-soaked brownies.
- 12
Dust the top generously with cocoa powder before slicing and serving.
Notes
For the best results, ensure the brownies are completely cool before adding the espresso and frosting to prevent the frosting from melting.
