- 26 oz Chicken breast (Raw; cut into bite-sized pieces)
- 18 oz Sweet potatoes (Raw; dice small)
- 110 g Red onion (1 medium; dice)
- 2 cup Broccoli (Fresh or frozen)
- Olive oil cooking spray (For spraying the ingredients)
- Salt (For seasoning the bowl ingredients; amount unspecified)
- Black pepper (For seasoning the bowl ingredients; amount unspecified)
- Garlic powder (For seasoning the bowl ingredients; amount unspecified)
- 0.75 cup Plain 0% Greek yogurt
- 15 ml Lemon juice (Juice of 1/2 lemon)
- Hot sauce (To taste; creator used Hank Sauce Cilantro Lime)
- 0.5 tsp Salt (For the sauce)
- 1 tsp Black pepper (For the sauce)
- 1 tsp Ground mustard seed
- 1 tsp Garlic powder (For the sauce)
- Water (As needed to thin the sauce)
Steps
- 1
Cut the raw chicken breast and sweet potatoes into bite-sized pieces, keeping the sweet potato dice small. Dice the red onion.
- 2
Put the chicken, sweet potatoes, broccoli, and red onion in the air-fryer basket. Spray with olive oil cooking spray, season with salt, black pepper, and garlic powder, then mix until evenly coated.
- 3
Cook using one of the stated methods: air-fry at 400°F (200°C), or bake at 450°F (230°C), for 20–22 minutes. Toss halfway through cooking. Cook until the chicken reaches 165°F (75°C) and the sweet potatoes are fork-tender.
- 4
While the basket cooks, combine the Greek yogurt, lemon juice, hot sauce, 1/2 teaspoon salt, 1 teaspoon black pepper, ground mustard seed, and garlic powder in a bowl.
- 5
Add water to the sauce as needed, mixing until it reaches your desired consistency.
- 6
When everything is fully cooked, divide the chicken and vegetables evenly among four meal-prep containers. Drizzle the yogurt sauce over the bowls and serve.
Notes
Makes 4 bowls. Refrigerate for up to 4 days. For longer storage, freeze; keep the sauce in a separate container and add it after reheating. The source does not specify an amount for the cooking spray or the basket seasonings.
