Ingredients

  • 2 Medium bananas (Mashed; approximately 210 g edible flesh)
  • 200 g Blueberries (Fresh or frozen)
  • 200 g Natural peanut butter (Preferably creamy and without added sugar)
  • 2 Eggs (Large)
  • 1 tsp Baking soda

    Preheat the oven to 180 °C (350 °F). Line a 6-cup muffin tin with paper liners or lightly grease it to prevent sticking.

    Peel the bananas and mash them in a large bowl with a fork until almost smooth, leaving a few small pieces if desired.

    Add the eggs to the mashed bananas and mix until fully incorporated.

    Stir in the natural peanut butter and baking soda. Mix until you have a thick, homogeneous batter with no dry baking soda remaining.

    Add the blueberries and gently fold them in with a spatula to distribute them without breaking them up too much.

    Divide the batter evenly among the 6 muffin cups. There is no need to fill the cups to the rim; leave some room for the muffins to rise.
