Ingredients
- 6 eggs (Whisked through a sieve; season with salt and pepper at the end of cooking.)
- 1 lemon (Juice; use some for the cream-cheese mixture and about half for the salmon.)
- 2 packs chives (Chopped; pack size unspecified. Reserve some for topping and use a handful in the cream-cheese mixture.)
- 1 pack garlic Philadelphia cream cheese (Pack size unspecified.)
- 0.5 red onion (Chopped.)
- 1 tsp sesame oil
- smoked salmon (Packs; number and pack size unspecified.)
- 1 tbsp extra-virgin olive oil
- 1 tbsp butter (For cooking the eggs.)
- 2 croissants (Halved before toasting; source spells this as “crossings.”)
- 1 handful crispy onions (Source says “crust onions”; interpreted as crispy onions, also called for during assembly.)
- 1 tsp chilli oil (Optional, if you like heat.)
- salt (To taste; season the cream-cheese mixture and salmon, and season the eggs at the end of cooking.)
- black pepper (To taste; season the cream-cheese mixture and salmon, and season the eggs at the end of cooking.)
Steps
- 1
Whisk the eggs through a sieve into a bowl, then set them aside until ready to cook.
- 2
Chop the lemon and chives. Set them aside, reserving some chopped chives for topping.
- 3
Make the cream-cheese mixture: combine the garlic cream cheese, chopped red onion, lemon juice, sesame oil, a handful of chopped chives, salt, and pepper. Mix until combined.
- 4
Season the smoked salmon with the juice of about half the lemon, extra-virgin olive oil, salt, and pepper.
- 5
Heat the oven to 160°C / 320°F. Halve the croissants and place them in the oven for 5–6 minutes, until flaky. Watch carefully so they do not burn.
- 6
Heat the olive oil and butter in a pan. Add the whisked eggs and cook them slowly, taking the pan on and off the heat until they reach the consistency you like.
- 7
Season the eggs with salt and pepper only at the end of cooking.
- 8
Spread the cream-cheese mixture over the toasted croissant halves. Top with the eggs, additional chives, smoked salmon, and crispy onions. Drizzle with chilli oil if you want some heat.
Notes
The source does not specify the smoked-salmon quantity, pack sizes for the chives or cream cheese, or the amount of crispy onions. It also does not give a precise amount of lemon juice for the cream-cheese mixture; use lemon juice to taste, reserving about half the lemon for the salmon.
