Ingredients

  • 4 salmon fillets (skin on)
  • 1 tbsp olive oil
  • salt (to taste)
  • freshly ground black pepper (to taste)
  • 2 tbsp butter
  • 2 garlic (minced)
  • 0.75 cup whole milk (can substitute with evaporated milk)
  • 0.5 cup heavy cream
  • 0.25 cup Swiss cheese (freshly shredded)
  • 0.25 cup Parmesan cheese (freshly shredded)
  • 1 lemon zest (from 1 lemon)
  • 1 tbsp lemon juice (or more to taste)
  • ground white pepper (optional, to taste)
  • parsley (for garnish)

Steps

    Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.

    Place the salmon fillets on the prepared baking sheet.

    Drizzle the salmon with olive oil and season with salt and black pepper.

    Bake in the preheated oven until the salmon flakes easily with a fork, about 15 minutes. Note that cooking time will vary based on the thickness of the fillets.

    Meanwhile, for the sauce, melt butter in a saucepan over medium-low heat.

    Add the minced garlic and cook just until fragrant, about 30 seconds.

    Stir in the milk and heavy cream; simmer for 2 to 3 minutes.

    Lower the heat to very low. Add the shredded Swiss cheese and Parmesan cheese in small handfuls, whisking constantly until completely melted.

Notes

Serve over buttery orzo with roasted broccoli on the side. You can substitute whole milk with evaporated milk for a richer sauce.
