Smashed Potato Pie
A viral and crispy pie with a smashed potato base, topped with melted mozzarella cheese, juicy cherry tomatoes, and fresh basil. A creative and gluten-free version of a Caprese tart.

Ingredients
- 750 g small potatoes (washed and whole)
- 3 tbsp olive oil (for drizzling)
- salt (to taste)
- black pepper (to taste)
- 200 g shredded mozzarella cheese (or fresh mozzarella cut into pieces)
- 150 g cherry tomatoes (halved)
- 5 shallots (thinly sliced)
- 1 handful fresh basil (leaves for garnish)

Preheat the oven to 200°C (400°F).

Boil the potatoes in salted water until tender, approximately 15-20 minutes. Drain them well.

Place the cooked potatoes on a baking tray lined with parchment paper.

Use the bottom of a glass or a potato masher to smash each individual potato until flat but still holding its shape.

Drizzle generously with olive oil and season with salt and pepper.

Bake the potatoes for 20-25 minutes or until the edges are golden and very crispy.

Remove from the oven and distribute the shredded mozzarella cheese evenly over the potato base.

Add the halved cherry tomatoes and shallot slices over the cheese.

Return to the oven for another 10-15 minutes until the cheese is bubbly and golden, and the tomatoes have softened.

Remove from the oven and garnish with fresh basil leaves before serving.
Notes
To ensure the base turns out crispy, make sure the potatoes are thoroughly dried after boiling and use enough olive oil. You can substitute shallots for red onion if you prefer.
