Feta and Spinach Rice Paper Rolls and Mozzarella Chips

Ingredients
- 8 Rice paper (round sheets)
- 2 cup Fresh spinach (chopped and sautéed or drained)
- 0.5 cup Feta cheese (crumbled)
- 2 Scallions (chopped)
- 1 tbsp Fresh dill (chopped)
- 0.5 cup Mozzarella cheese (shredded)
- 1 tbsp Olive oil (for brushing)
- Sesame seeds (for garnish)

For the feta rolls: In a bowl, mix the chopped spinach, crumbled feta cheese, scallions, and dill until well combined.

Dip a rice paper sheet into warm water for a few seconds until pliable. Place it on a clean surface.

Place a portion of the feta and spinach mixture in the center of the rice paper. Fold the sides inward and roll up tightly.

Brush the rolls with a little olive oil and sprinkle sesame seeds on top.

Cook in the air fryer at 200°C (400°F) for about 8-10 minutes or until golden brown and crispy.

For the mozzarella chips: Cut the rice paper sheets into triangles or squares.

Place a small amount of shredded mozzarella cheese between two pieces of moistened rice paper so they stick together.

Cook in the air fryer at 200°C (400°F) for 3-5 minutes until puffed and crispy.
Notes
Make sure not to over-soak the rice paper or it will tear. For the chips, you can add spices like oregano or paprika to the cheese.
