Ingredients
- 3 heads Garlic cloves (peeled)
- 1 cup Olive oil (enough to cover the garlic)
- 1 cup Unsalted butter (2 sticks, softened to room temperature)
- 1 tbsp Fresh parsley (finely chopped)
- 0.5 tsp Salt (plus more to taste)
- 0.25 tsp Black pepper (freshly cracked)
Steps
- 1
Preheat your oven to 250°F (120°C).
- 2
Place the peeled garlic cloves into a small oven-safe ramekin or baking dish.
- 3
Pour the olive oil over the garlic cloves until they are completely submerged.
- 4
Place the dish in the oven and bake for about 2 hours, or until the garlic is extremely soft, golden brown, and jammy.
- 5
Remove from the oven and let the garlic and oil cool to room temperature.
- 6
In a medium mixing bowl, combine the softened butter, the roasted garlic cloves (strained from the oil), chopped parsley, salt, and pepper.
- 7
Use a fork or a whisk to mash the garlic into the butter and whip everything together until well combined and fluffy.
- 8
Spread the garlic confit butter onto toasted bread and serve immediately, or store in the refrigerator.
Notes
The leftover garlic-infused oil is liquid gold—save it in a jar in the fridge to use for salad dressings, sautéing vegetables, or drizzling over pasta.
