- black pepper (for the chicken, to taste)
- 25 g cornflour
- 30 g honey
- chilli flakes (½–1 tsp, to taste)
- 1 tsp hot sauce (for the chicken glaze)
- 15 g Parmesan (grated, for the chicken glaze)
- 5 g Parmesan (grated, to finish)
- fresh parsley (small handful, chopped; some for the chicken glaze and some to finish)
- 50 g lighter mayonnaise (for the creamy drizzle)
- 1 tsp hot sauce (for the creamy drizzle)
- 1 tsp jalapeño juice (for the creamy drizzle)
- salt (for the creamy drizzle, to taste)
- black pepper (for the creamy drizzle, to taste)
Steps
- 1
Rinse the cut fries under cold water, then pat them thoroughly dry with kitchen roll.
- 2
Add the fries' garlic granules, smoked paprika, salt and a few sprays of olive oil. Toss until evenly coated.
- 3
Air-fry the fries at 190°C for 18–22 minutes, shaking the basket halfway through.
- 4
Put the diced chicken in a bowl with the egg white and stir to coat it lightly.
- 5
Season the chicken with its garlic granules, smoked paprika, salt and black pepper.
- 6
Put the cornflour in a bowl and toss the chicken in it until lightly coated all over. Shake off excess cornflour.
- 7
Air-fry the chicken at 200°C for 10–12 minutes, shaking halfway through, until golden and cooked through.
- 8
Mix the lighter mayonnaise, hot sauce, jalapeño juice, salt and black pepper until smooth. Set the creamy drizzle aside.
- 9
Transfer the cooked chicken directly to a large bowl. Add the honey and hot sauce, then add the chilli flakes and 15 g grated Parmesan.
- 10
Add the chopped parsley to the chicken and toss well until the pieces are coated in the glaze.
- 11
Pile the crispy fries onto plates or bowls and top with the hot honey Parmesan chicken.
- 12
Finish with spoonfuls of the creamy drizzle, the remaining grated Parmesan and fresh parsley. Serve.
